For those of you who think I can only cook nasty food☺, this blog is for you. Today's menu was delish!! We had Potato-Corn Chowder (low-fat/vegan), home-made rolls, and White Chocolate Macadamia Nut Cookies (vegan). YUMMMMMM!!
Maybe you're asking yourself, what's up with all of this vegan stuff. Two years ago, this month, the girls and I embarked on a vegetarian diet. I had been doing a lot of reading on the benefits of following a vegetarian diet. I was working on the girls - trying to convince them this would be a good thing. Sadly, they weren't convinced. It took a girl at ballet to say she was vegetarian for Gab and Tuna to change their minds. (****Never underestimate the power of peer pressure!!***)
In December, we discovered that Tuna was lactose-intolerant. Poor baby, she was the one who loved her cheese and ice cream. So I started looking for more vegetarian/dairy-free (basically, vegan) recipes, I came upon articles and books about factory farming. In my opinion, factory farming is NOT a good thing. Anyways, vegan is being meat-free, dairy-free, egg-free ...no animal products. I've been trying to find different recipes that are "normal" and taste good - today's lunch was an example ☺
